Ingredients Lobster Thermidor



  • 2 lobster tails

For the Sauce:

  • 4 tablespoons unsalted butter

  • 2 tablespoons all-purpose flour

  • 1 cup heavy cream

  • 1/2 cup fish stock

  • 1 cup grated Parmesan cheese

  • 2 tablespoons fresh tarragon (chopped)

  • Salt and pepper to taste

Fish Stock

  • 4 cups of water

  • 1 cup shrimp shells

  • 1 Tbsp chopped shallots

  • 1 tsp tarragon

Optional:Fresh lemon wedges (for serving)

  • If you are using frozen lobster tails. Thaw the lobster tails completely.

  • Cut the lobster tail down the middle and remove the vein.

  • Gently run your fingers along the sides and the bottom of the lobster, pulled the meat out of the shell.


Step 2: Extract the Lobster Meat

  • Take your time with the tail, ensuring you get all the meat without any shells.

  • Chop the lobster meat into bite-sized pieces and set it aside. You can expect to get around 2 cups of lobster meat from two average-sized lobsters.







Step 3: Make the Creamy Parmesan Tarragon Sauce


  • In a saucepan over medium heat, melt the butter until it bubbles. Sautee the chopped shallots and garlic.

  • Whisk in the flour to create a roux and cook for about 2 minutes until it turns a light golden shade.

  • Gradually add the heavy cream while continuously whisking to avoid lumps.
